Dinner Tonight is.....

My dear friend Mara, just bought me a really awesome Latin cookbook. She knows how much I love to try new things out! Dinner tonight will be Roast Chicken with Garlic Rub with black beans & brown rice. I reduced the amount of salt in the recipe for my low sodium diet.

Roast Chicken with Garlic Rub

1- 4 to 5 lb chicken
12 cloves of Garlic minced
1/2 tsp sea salt
1 tbl black peppercorns
2 tbls dried oregano
2 tbls olive oil
2 tbls white wine vinegar

Pound peppercorns until coarsly grounded. Add garlic, salt, and oregano. This is done the easiest using a mortar and pestle, but if you do not have one place ingredients in a small bowl and press firmly with a fork or spoon to small crumbles, almost powder like. Stir is oil and vinegar.

Preheat Oven to 500 degrees.
Loosen the skin of the chicken by working your fingers gently in between the skin and meat. Careful not to tear the skin. Using a small spoon smear the olive oil mixture under the skin all over the chicken and inside the cavity as well.
Tie chicken legs together with cooking twine and place on a rack inside a roasting pan. Roast chicken for 30 minutes. Lower temperature to 400 degrees and continue to roast for 45-50 minutes or until juices run clear.
Let rest 10 minutes before serving. Skin should be nice and crispy with a beautiful golden brown color.
