Easy Grilled Vegetables with Balsamic Dressing

Just made these tonight paired with a juicy steak and glass of wine! A simple summer evening recipe.

1 zucchini
1 yellow squash
1 red bell pepper
1 yellow bell pepper
1 eggplant
1 TBL Extra Virgin Olive Oil
Fresh ground pepper to taste
3 TBL balsamic vinegar
1/2 TBL Extra Virgin Olive Oil
1 tsp Rosemary
1/2 TBL fresh ground pepper
1 tsp basil (fresh or dried)
2-3 cloves garlic, minced

Slice zucchini, squash, and eggplant lengthwise about 1/2 inch thick wide. Cut peppers in half, remove stem and seeds. Brush vegetables front and back with olive oil, sprinkle with pepper.

Place on hot grill. Grill about 7-10 minutes or till desired. Flip once halfway through.

Mix all ingredients for dressing together with fork or whisk, drizzle over vegetables and serve.
