Roasted Salmon with Mustard Sauce

  • 2 salmon fillets
  • 1/4 cup fat free mayo
  • 1/4 cup fat free sour cream
  • 2 tbl Dijon mustard
  • 2 tbl spicy brown mustard
  • 1 shallot - diced
  • pepper to taste
  • 1 tbl olive oil
  • 1 tsp red wine vinegar

Heat oven to 425 degrees. Place salmon in a shallow baking dish. Rub both sides of fish with olive oil and sprinkle with pepper.

In a mixing bowl combine mayo, sour cream, dijon mustard, and spicy brown mustard. Mix thoroughly. Stir in shallots, red wine vinegar, and pepper to taste.

Pour oven fish fillets. Spread evenly with a spoon. to cover tops of fillets.

Bake for 10-15 minutes at 425 degrees depending on thickness of fillet.

For extra texture and more of a vinegar taste add a small jar of capers to the sauce mixture before baking.

whole wheat angel hair pasta drizzled with olive oil, garlic, and reduced fat Parmesan cheese
spinach with lemon juice and garlic
mixed green salad with vinegar and olive oil
