Skinny Bean Soup

I love Bean Soup but most have lots of sodium and high fat content due to how they are prepared.
This is a very simple to prepare, filling, low fat, low calorie, low sodium, and high in Protein recipe!
Tastes so good you feel like you are cheating!Skinny Bean Soup
2 cups Dry Pinto Beans (soaked over night, or quick soak method see below)
1- can NO SALT Added diced tomatoes
1-2 jalapenos, diced, depending on how spicy you like things
1 yellow onion, chopped
1/2 cup chopped Cilantro
1/2 cup chopped green onions
3 TBL Cumin
1 TBL Chili Powder
3-4 cloved of garlic, minced
1 TBL Garlic Powder
2 TBL Black Pepper
2 TBL Red Pepper
1 TBL Mrs. Dash Table Blend
1 TBL Mrs. Dash Chipotle
1-2 TBL Tony Chachere's SALT FREE seasoning
8 cups of Water
In a large stock pot combine all ingredients. Cook on High heat, till boil. Reduce heat and cover. Simmer for 2 1/2 hours or till beans are soft.
This makes a lot, so I usually freeze leftovers. Also great for when you have a crowd coming, everyone loves it- even the kids! Garnish with more Cilantro or even top with a bit of fat free sour cream.
Quick Soak Method
Fill a container full of hot water, place beans in container, cover and soak for 2 -3 hours.
